HYANNISPORT APPLE COFFEE CAKE
2 CUPS brown sugar
1 1/2 CUPS vegetable oil
2 TEASPOONS vanilla
2 TEASPOONS cinnamon
1/2 TEASPOON salt
1 TEASPOON baking soda
3 CUPS flour
3 large apples (Granny Smith, Cortland or Macintosh)
1 CUP broken pecan pieces (optional)
Mix together brown sugar, oil, eggs and vanilla. Beat well. In a separate bowl, mix together cinnamon, salt, soda and flour. With wooden spoon, stir the flour mixture into the egg mixture.
Peel, core and dice apples. Add them and pecans to the mixture.
Spread across the bottom of a 9 x 14" greased and floured baking pan, or use a floured bundt pan.
Bake at 350 degrees for 45 minutes, or until an inserted knife comes out slightly sticky.
Serves eight. Wait one day before serving.
